Ayam Tanjong Jara

 

Ingredients
Preparation

For The Chicken
1 whole chicken, cut into small pieces
2 tablespoon turmeric powder
A pinch of salt
Cooking oil for frying the chicken

For The Sauce
3 cloves of shallots
6 cloves of garlic
2 cm of ginger
2 lemon grass
1 tablespoon curry powder
1 tablespoon chili paste
2 tablespoon chili sauce
1 tablespoon tomato sauce
1 tablespoon oyster sauce
3 tablespoon coconut milk
1 tablespoon “kerisek”
100 grams brown sugar
A pinch of salt
2 tablespoon of cooking oil

For The Chicken
Mix together the chicken with turmeric powder and salt.

Fry the chicken until golden brown.

For The Sauce
Blend together the shallots, garlic and ginger.

Add in the chili paste and curry powder.

Add in the lemon grass, chili sauce, curry powder, tomato sauce and oyster sauce.

Then, add in the brown sugar, kerisek, curry leaves and half cup of water.

Lastly, pour in the coconut milk. Season with salt. Add in the chicken.

Ready to serve
