Braised Beef Roulade with asparagus and mashed pumpkin

 

Ingredients
Preparation

800 grams Sirloin Steak
1 tablespoon of olive oil
1 teaspoon of paprika powder
1 teaspoon of mix herbs
Salt and white pepper for seasoning

For the Gravy
8 shallots
4 cloves of garlic
1 tablespoon of black pepper powder
2 bay leaves
1 teaspoon of mix herbs
1 liter brown sauce
1 tablespoon of butter
1 cup of cream

Mashed Pumpkin
2 ulas pumpkin
2 tablespoon of cream
3 tablespoon of curry powder
Salt and white pepper for seasoning

Marinate the beef for ½ an hour.

Arrange the asparagus and tie with a small rope.

Cook the beef with the sauce.

For the Gravy
Fry the shallots and garlic until brown.

Add in the bay leaves, black pepper powder and mix herbs.

Add in the brown sauce. Stir well.

Add in the cream.

Slow down the heat and let it cook.

Mashed Pumpkin
Boil the pumpkin until cook.

Drain the pumpkin and mashed it slowly.

Mix together with all the other ingredients.

Served with the beef.
