Kerapu Goreng Kuah Tomyam

 

Ingredients
Preparation

1 garoupa fish
½ cup of corn flour
Salt and white pepper for seasoning
2 tablespoon of lemon juice

For the Gravy
3 shallots
7 chili padi
2 lemon grass stick
2 cm galangal
3 tomatoes
Coriander leaves
½ a cup of tamarind juice
Bergamot leaves
1 teaspoon of fish sauce
½ stick carrot
1 big onion
Salt for seasoning
1 tablespoon of sugar

Marinade the fish with lemon juice, salt and white pepper.

Coat the fish with flour and fry with hot cooking oil.

Blend together all the shallots, onions, chili padi, galangal, and tomato with tamarind juice and lemon grass.

Fry the blended ingredients and add in the chicken stock.

Season with fish sauce, salt, sugar and other vegetables.

Finally, pour on top of the fried fish.
